Girls Weekend!

This weekend my baby girl and I did an awesome mini photo session with my old neighbor. I love them all so much!

Friday we took Michael to the airport, and my afternoon client ended up canceling so Ella and I took a trip to the KOP mall. In which, I went all the way to, forgetting that there’s no stroller in Mike’s car. Good thing Babies R’ Us is right there, I ran in and grabbed an umbrella stroller for $19.95 {which I love! So convenient!}

We budgeted some of our tax return money for spring/summer clothes {I seriously have been wearing the same two outfits every other day. Not exaggerating.} I’ve been hating clothing shopping lately, unless it’s for exercise clothing, or accessories.

For Ella, shopping it easy. I could have blown the entire budget on her, but I needed to get some new threads or people are going to start talking. It’s been tough. Every time I’d go to the mall, I would just not feel like shopping, nothing in the stores were my style {which I am not even quite sure what my style is}, and by the time I got to shop for me, Ella would start fussing, understandably, being it’s usually approaching her nap time. So I would leave the mall empty handed.

I don’t know, though. Mike goes away and I find everything I need! A few key pieces, a dress for Ella’s party/our photo shoot above, and a pair of coral jeans from Lord & Taylor. I’ve had this gift card there for like 2 years burning a hole, otherwise I would never shop there {I’m more of an H&M, Forever, Marshalls, TJ Maxx kind of gal}.

That night I made a really healthy delicious dinner {salmon, roasted veggies, kale salad}, which I did not photograph … but trust me, it was amazing.

Saturday I taught an AWESOME bootcamp class. I was actually jealous I couldn’t workout with them. I have a lot of circuits going on with some complex moves so I have to really focus on their form. I stuck on a few rounds at the end and worked out along with them during the group sequences.

That night I vedged out on the couch and enjoyed the most fantastic dessert ever. AND it was “healthy” o.m.g.

First you start out with homemade peanut butter cups (you can sub sunflower seed butter for allergies):

Homemade Peanut Butter Cups:

Bottom Layer:
2 Tbsp melted coconut oil
4 Tbsp smooth peanut butter
1/2 TBSP honey or maple syrup
melt in a small saucepan together until smooth and creamy
Set muffin pan liners onto a muffin tin. Pour one tablespoon into each muffin cup liner without dribbling it down the inside (or you’ll get streaks in the final product!). Put it in the freezer on a flat surface.

Top Layer:
2 Tbsp melted coconut oil
4 Tbsp smooth peanut butter
1/4 cup unprocessed cocoa powder
1/2 TBSP honey or maple syrup

 

melt together until smooth and pour on top of hardened PB layer. Place back in fridge until set

Then you make the vanilla soft serve:

Vanilla Bean Softserve

ingredients:

2 ripe bananas, frozen in chunks

1/4 teaspoon vanilla extract

1/4 vanilla bean, scraped out

1/2 T unsweetened vanilla almond milk, hemp milk, non-dairy milk of choice

directions:

Place all ingredients in food processor or high speed blender and whip until it forms like soft serve ice cream.

 

Chop up a few PB cups and place on top! It is RIDICULOUS!!!
