Happy Meat-free Monday to you all!
I hope everyone had a great weekend! Mine was pretty interesting. MTV spent about 10 hours on Saturday and Sunday filming my sister and parents, Michael, my brothers and myself watched from afar on Saturday (more on that at bottom of post).
First, I wanted to celebrate MFM with a post on my very first Raw Vegan Pie…from Ani’s new book of course 🙂
I spent Sunday morning doing some yoga…then some work I had to get done…and finally, a “cyber-free” afternoon of “un-baking” and trashy TV (I watched the ENTIRE first season of WEEDS. I fel ashamed admitting that I watched that much in one day…I should of read a book….but I didn’t feel like using my brain anymore).
Prior to the trashy TV-time…
I couldn’t stay OUT of the kitchen once I got this in the mail:
The only problem was….it’s SO cute that I was being extra careful NOT to get anything on it, haha….
When I was picking one of these flirty aprons out…I had SUCH a tough time deciding which to pick! Usually, I go for the pink…however, I feel I have SO much pink, and another pink apron (although, not NEARLY as cute)–so I went for the summery flowers, it matches the bloggy 😉
Luckily, this recipe wasn’t too messy 😉
Cashew Kream Blackberry Torte
To make the pie crust:
2 Cups Nuts (I used 1 1/2 cups Walnuts, and 1/2 Cur Pistachios)
1 teaspoon sea salt
About 6-8 pitted Medjool dates (make sure they are not dry, if so, soak them)
Place nuts & salt in food processor (luckily, my mini prep fit them all, b/c we all know I need a new large food processor), process into small bits, do not over-do it, you want to have a good texture. Add dates and process until you they bind into a dough. I needed about 7 or 8 dates, you can add them a bit at a time and process until it reaches the right consistency.
Take a brush or a paper towel and lightly grease the bottom of your glass pan with coconut oil so the crust does not stick. Scoop the crust into the pie pan:
I covered the crust with plastic wrap and let set in fridge for about 20 minutes
To make the Kream Filling:
1 cup cashews
1/2 cup coconut oil
1 tablespoon alcohol-free vanilla extract
1/2 cup filtered water
3 TBS Agave Nectar
2-3 Tablespoons Lemon juice
1 teaspoon Lemon Zest
Place all ingredients into your Vitamix, or high speed blender and blend until smooth. Pour right into pie crust, or you can place in a mixing bowl and clean your blender while the crust sets in the fridge. Top with berries (you can also use peaches, cherries, or whatever fruit you desire) Refrigerate the pie covered, letting filling set a bit, then serve and enjoy!
I think this would be even more yummy with a side of Morgan’s DELISH vanilla coconut whip 🙂
The MTV filmed my family all weekend, on Saturday, and after they were through (with a 10 hour day) my brother convinced the directer, producer and a few of the other crew members to hang out in good ole’ Conshy with us. They want my mom to have her own show, she was “a natural” in front of the camera, lol. They are the last taping, thus being the last episode to air. “Moving In” will start in October, and my sisters episode will probably air sometime in November. The whole thing is pretty wild.
We are all still a little nerv about how my family will be perceived. They pretty much “directed” them the whole show. I mean, this is the home of Jersey Shore…yikes!

My mom, the actress. She said, quote “I KNOW I am going to be getting a moon man out of this!”
So, my sister is like, ZERO maintenance, she is one of those girls that really doesn’t get into make-up and clothes, she straightens her hair, throw in chapstick, and maybe some eyeliner, and that’s it! You gotta admire the girl…she is how more of us ladies should be…I have enough ‘high maintenance’ genes for the both of us!
The conversation I had with my sister on Saturday Morning:
L-“So, Car, are you going to put in some makeup for MTV?”
L- “Well, you know, actors wear lots of makeup b/c sometimes the camera makes you look shiny, or pale under those lights”
C”Laury, I really don’t care..I put on some eyeliner, that’s it.”
L– “Well, maybe you should put on a little blush, or bronzer.”
C– “nope, leave me alone, I look pretty enough.”
L– “Oky doke.”
I wish I could have that same attitude…but, I am the opposite. She’s awesome…I have been trying to push bronzer and high heels on her since she was 12….she was never having ANYof it. Baseball caps, ponytails and ice hockey equipment…..and a lock on her door to keep me out when I tried to play dress-up my little sister. Me and Carly’s common denominator was rescuing kittens 🙂
Luckily, Robbie let me do whatever when we were much younger…he let me give him facials, and highlight his hair. Sorry, Rob…I know you’re comfortable enough with your masculinity to admit that now 😉
