Raw Vegan Cashew Kream Blackberry Torte

Happy Meat-free  Monday to you all!

I hope everyone had a great weekend! Mine was pretty interesting. MTV spent about 10 hours on Saturday and Sunday filming my sister and parents, Michael, my brothers and myself watched from afar on Saturday (more on that at bottom of post).

First, I wanted to celebrate MFM with a post on my very first Raw Vegan Pie…from Ani’s new book of course 🙂

I spent Sunday morning doing some yoga…then some work I had to get done…and finally, a “cyber-free” afternoon of “un-baking” and trashy TV (I watched the ENTIRE first season of WEEDS. I fel ashamed admitting that I watched that much in one day…I should of read a book….but I didn’t feel like using my brain anymore).

Prior to the trashy TV-time…

I couldn’t stay OUT of the kitchen once I got this in the mail:

The only problem was….it’s SO cute that I was being extra careful NOT to get anything on it, haha….

When I was picking one of these flirty aprons out…I had SUCH  a tough time deciding which to pick! Usually, I go for the pink…however, I feel I have SO much pink, and another pink apron (although, not NEARLY as cute)–so I went for the summery flowers, it matches the bloggy 😉

Luckily, this recipe wasn’t too messy 😉

Cashew Kream Blackberry Torte

To make the pie crust:

2 Cups Nuts (I used 1 1/2 cups Walnuts, and 1/2 Cur Pistachios)

1 teaspoon sea salt

About 6-8 pitted Medjool dates (make sure they are not dry, if so, soak them)


Place nuts & salt in food processor (luckily, my mini prep fit them all, b/c we all know I need a new large food processor), process into small bits, do not over-do it, you want to have a good texture.  Add dates and process until you they bind into a dough. I needed about 7 or 8 dates, you can add them a bit at a time and process until it reaches the right consistency.

Take a brush or a paper towel and lightly grease the bottom of your glass pan with coconut oil so the crust does not stick. Scoop the crust into the pie pan:

I covered the crust with plastic wrap and let set in fridge for about 20 minutes

To make the Kream Filling:

1 cup cashews

1/2 cup coconut oil

1 tablespoon alcohol-free vanilla extract

1/2 cup filtered water

3 TBS Agave Nectar

2-3 Tablespoons Lemon juice

1 teaspoon Lemon Zest

Place all ingredients into your Vitamix, or high speed blender and blend until smooth.  Pour right into pie crust, or you can place in a mixing bowl and clean your blender while the crust sets in the fridge. Top with berries (you can also use peaches, cherries, or whatever fruit you  desire) Refrigerate the pie covered,  letting filling set a bit, then serve and enjoy!

I think this would be even more yummy with a side of Morgan’s DELISH vanilla coconut whip 🙂

MTV recap:

The MTV filmed my family all weekend, on Saturday, and after they were through (with a 10 hour day) my brother convinced the directer, producer and a few of the other crew members to hang out in good ole’ Conshy with us.  They want my mom to have her own show, she was “a natural” in front of the camera, lol. They are the last taping, thus being the last episode to air. “Moving In” will start in October, and my sisters episode will probably air sometime in November. The whole thing is pretty wild.

We are all still a little nerv about how my family will be perceived. They pretty much “directed” them the whole show. I mean, this is the home of Jersey Shore…yikes!

my brothers watching behind the scenes:

My mom, the actress. She said, quote “I KNOW I am going to be getting a moon man out of this!”

So, my sister is like, ZERO maintenance, she is one of those girls that really doesn’t get into make-up and clothes, she straightens her hair, throw in chapstick, and maybe some eyeliner, and that’s it! You gotta admire the girl…she is how more of us ladies should be…I have enough ‘high maintenance’ genes for the both of us!

The conversation I had with my sister on Saturday Morning:

L-“So, Car, are you going to put in some makeup for MTV?”


L- “Well, you know, actors wear lots of makeup b/c sometimes the camera makes you look shiny, or pale under those lights”

C”Laury, I really don’t care..I put on some eyeliner, that’s it.”

L– “Well, maybe you should put on a little blush, or bronzer.”

C– “nope, leave me alone, I look pretty enough.”

L– “Oky doke.”

I wish I could have that same attitude…but, I am the opposite. She’s awesome…I have been trying to push bronzer and high heels on her since she was 12….she was never having ANYof it. Baseball caps, ponytails and ice hockey equipment…..and a lock on her door to keep me out when I tried to play dress-up my little sister. Me and Carly’s common denominator was rescuing kittens 🙂

Luckily, Robbie let me do whatever when we were much younger…he let me give him facials, and highlight his hair. Sorry, Rob…I know you’re comfortable enough with your masculinity to admit that now 😉

    I’m like your sister – no makeup or very very little. I just was never comfortable with it on — and high heels? Only on very special occasions (like my wedding!)

    How interesting that your family is going to be on an MTV show. It will be neat to see how the editors portray everyone.

    I have a brother and a sister. My brother is VERY different, but my sister and I are two of the same. Love her!

    Love the photos of the filming!! That’s so funny that they want to give your mom her own show. Ani Phyo’s dessert looks delish!!! I wonder if I could subtract the recipe and make a mini portion of it to try it out.

    Love the apron!! I’m such a kitchen nerd, I have an apron with my name on it!!! I use my vitamix and my food processor all the time. I have a pink Kitchenaid mixer which I got for a combined Christmas and birthday present.To be honest I don’t use it much but I just love looking at it in the kitchen because it’s pink.

    So, I’m completely new to your blog and love it! Especially the apron. 😉 So cute! And that cheezecake… mmmm.
    Weeds, definitely an awesome show! You must must must watch all seasons! I can’t wait for it to start up again this month!

    your raw cheezecake looks great! i just make my filling w/ 1 c soaked cashews, 2 tbsp lemon juice, and agave to taste. Done. Super easy. Crust almond meal, dates, agave so it sticks.

    The filming…omg you’re famous! See, someone as hot as you deserves to be famous 🙂

I like how you added agave, I will try that next time…we’re both all about beating to our own drums, I can never leave a recipe be as it is, haha…oh, and I forgot to mention, I am not going to be on the show, haha..I refuse…I would rather be famous other ways than on MTV–but my mom and sis will be on there!!!!

    I have two younger sisters. I think growing up, one of my sisters and I were very much alike, and I felt less like my other sister, who was more interested in make-up and clothes than I was. But now I think all three of us are much more alike than we might admit 🙂

    Hey sometimes you just have to totally veg out!

    The torte you made from Ani’s book looks divine! I checked out her desserts book (your post with the oatmeal raisin cookies reminded me that I’ve been meaning to lol), and I made an ice cream sandwich using her sesame snap cookie recipe and coconut ice kream one. I want to make the spiced blueberry cobbler topped with the leftover coconut ice kream 😀 Soo good! I actually think you would enjoy making this recipe I featured on my blog once for a vegan banana coconut cheesecake with chocolate macadamia crust(it’s soooo good):

    You look sexy AND cute in that apron. I can’t wait to read how we can get one as well 😀

    And definitely keep us up to date when the show airs!!! I want to watch it 😀 I don’t have a TV in my place when I go back up to school, but I’ll find one! hahaha

    I don’t have any siblings but that is really funny how you two are ;p My mom is the same way to me though.. about putting on makeup. She thinks I look really young and that I would look older if I put more on. I don’t know.. I don’t like spending a lot of time getting ready. I usually just throw on outfits too. And I don’t think it makes me look any less attractive. I just tell my mom that I happen to think I look beautiful without a lot of the extra stuff. But it does bother me a little that I look so young :

    I spend a lot of time in the kitchen. I left my super-cute apron in Virginia in my apartment : I wish I had brought it down with me lol. Heck, you can find me in the kitchen cooking or baking in a bathing suit! But you know what would be the ultimate kitchen gadget for me? The Kitchen-aid stand-mixer.. not sure in what color. I don’t even bake that often, but there’s just something about it. I’ve been admiring them since high school… sooo that’s a long time lol since I’m 22.

      Hahaha.. OMG—the producer that became BFF with my hubby produces True Life!!! He was an Irish/ Scranton guy…had both accents, it was very interesting! Nicest guy I ever met…Brendan. Just know though, if you get on, they will dictate your every move!!! ALL scripted
