This morning Jaxon and I spent a few hours at the allergist where he ate about a half a jar of peanut butter.
It was pretty nerve wracking since he has never had it, and that we were testing to confirm his recent blood work.
Everything went well, and we left the office much sooner than expected after they checked his vitals every 15 minutes, and he ate enough of the peanut butter (about two and a half hours total).
I’ll get into this more next week because I am pretty drained emotionally and physically …. it is still a pretty long road, however, we now can start giving him peanut butter (without tree nut contamination) and build his immunity, which still makes me nervous!
He LOVED it though … like I told them they need to fumigate the room because he had it everywhere (I wish I would have known to bring a change of clothes!)
We got home, he wanted to nap so I have been checking on him pretty often.
Luckily I had the ingredients to make one of my favorite simple sprouts salads … I needed something nutritious and quick that would give me energy.
Avocados are one of my favorite ways to load up on healthy fats. I am in love with Chosen Foods avocado oil and use it for EVERYTHING.

I love sprouts just as much! (No, they aren’t the same thing).
Sprouts are germinated seeds.
If you let a sprouting seed grow, then it eventually becomes a full-grown plant.
Sprouts are DELICIOUS and loaded with essential nutrients, fiber, and enzymes.
Microgreens are young seedlings of edible vegetables and herbs harvested less than 14 days after germination.
Microgreens contain up to 100 times the enzymes of regular, full-grown greens. This means your body can more easily assimilate important phytonutrients, vitamins and minerals.
Together, micro greens and sprouts make a POWERHOUSE bowl packed with nutrients!
I added in some healthy seeds, avocado, and organic farm-fresh cherry tomatoes with a delicious simple dressing.
You HAVE to try this ASAP!
It is so summery and would go perfect with a crisp cold glass of rosé 😉
Omega Sprouts Salad
- 1 package of sunflower microgreens
- 1 package of alfalfa sprouts
- 1 cup cherry tomatoes, sliced
- 1-2 ripe avocado(s), diced
- 1 TBSP chia seeds or hemp seeds (or a mix)
- 1 TBSP pumpkin seeds or sesame seeds (or a mix)
Update: I recently added a bunch of chopped arugula for a party and it was a big hit!
Mix all ingredients together right before serving, and add desired amount of dressing (below).
- 3 TBSP olive oil or avocado oil (I like Chosen Foods brand avocado oil, it is mild in taste)
- 2 TBSP Bragg’s apple cider vinegar
- juice of 1/2 a lemon
- 1/2 teaspoon dried basil
- salt and pepper, to taste
mix the dressing up and add to salad before serving!
