Mango Sorbet

First off a BIG thank you for all the sweet comments on my Maternity Photos! You all know how to make a girl blush in her 9th month of pregnancy πŸ˜‰

 

Let’s just call it MANGO MADNESS Week. Even though it’s already Wednesday :/

I am totally into them lately. Big time.

Monday it was 84 degrees here. I am not complaining…I am happy that the warmer weather has showed it’s face around these parts. However, I found out last week that I do NOT fair well in the heat these days. It wore me down, I got SUPER crampy and my ankles and feet doubled in size. No good. Ladies, if you have never been pregnant before my BEST advice to you is to GET pregnant in the summer. That’s what I did, and I feel lucky that I haven’t had to deal with the heat.

Knowing Monday was going to be so hot, I planned to make myself a cool dessert at the end of the day. A yummy Mango Gelato:

 

SUCH a simple recipe that I don’t even know if I want to call it a recipe.

 

To Make Mango Sorbet:

1 1/2 Cups Frozen Mango, rinsed to get the freezer smell off

3/4 cup Ice

Squirt of Agave or Stevia to taste

Splash of Almond Milk as needed

 

Place Mango and Ice and Agave/Stevia if usingΒ  in Vitamix or Food processor, blend on high and add almond milk as needed to give it the right consistency.

 

Grab your favorite Dairy-Free Ice Cream (I love vanilla bean coconut ice cream)

…layer it in a cup with some sorbet to make a lovely treat if you like. Or you can just eat the sorbet by itself!

OR you can make some vanilla banana softserve

1 banana, frozen in chunks

1 T Vanilla

Splash of Almond Milk as needed

Place all ingredients in Vitamix or food processor and blend until it’s an ice cream consistency πŸ˜‰

What’s my other food obsession you ask? Well, maybe you didn’t ask but I know you were thinking it.

 

Dr. Praeger’s California Veggie Burgers topped with Avocado and Thinly Sliced Cucumber on a Whole Grain Bun.

I have had this for lunch, dinner then lunch again the past two days. Is that bad? It saved on grocery’s πŸ˜‰

 

Speaking of…anyone want to come over and help me organize my cabinets and fridge? I am a mess over here and need to reorganize. I need some tips. I am totally ADD when it comes to this stuff. My mom was a HUGE help when we had to clean out my office and closets to make room for Ella. HELP! I need to use Morgan’s tips for stocking your healthy vegan kitchen so I have stuff here on hand to make once I am occupied with my baby girl. Then, I plan on either looking into CSA deliveries, if they do them around here or trying Suburban Organics Produce delivery my sister in law just started doing. My kitchen is atrocious though. I am sure there are things in my cabinet that I forgot I have..like the flax seed meal I just found unopened from a few months ago. Pregnancy brain doesn’t help my already ADD tendencies.

Nesting bug…give me the power to overcome my cabinets!!!!!

Do not fall into the negativity trap and write about the things that you were not able to do, but rather, write down only those things that pushed you forward.     Yum mangos are super tasty aren’t they. I’m on a roll of eating mango, broccoli and pineapple pretty much every day because they’re on special offer in the shop. I think pineapple is supposed to be really good for a person? I also read Dr Wu’s book on Feed Your Face, loved it, feel so much more energized after eating less sugar and dairy. It really does make a difference doesn’t it. Great tip on using a fitness journal, I document all my workouts in a journal and my thoughts on workout etc.

    Wow can’t believe your temp is in the 80s, that’s hot. Hope you get lots of rest before the birth.

    Sounds lovely!!! Yes, I often go days eating the same thing in a row…. green monsters are a daily creation in my kitchen!! Some things are just far too good, I could never get tired of them!

    I’ve def eaten the same thing for a few days. I tend to cook in bulk as I don’t have time to cook every night and then mix and match different sides and such. That’s what you gotta do when you don’t have time to cook daily nor just pick up whatever you want at a restaurant.

    Just take everything in strides, even if it means that you’ve got a bit of a mess on your hands right now. Do what you can…even if it’s 5 minutes, but don’t stress about it. You’ve got little Ella on her way any day now. πŸ™‚

    Ohhh yes what a perfect treat for the summer months! Yummers. I actually have a Fitbook that I write in everyday. I keep track of what I eat as well as my workouts and I LOVE it. It really helps me to choose smarter food options throughout the day, especially if I see Im low on veggies intake or something!

    I usually eat the same things over and over again — the same salads, the same chili and soups, etc. Yes it definitely helps my grocery bill!

    I just noticed an entire unopened bag of frozen mangos in my freezer and didn’t know what to do with them. I never use them in my smoothies so thanks for the great idea. I know I will love some mango sorbet!

    I’ve eaten that same thing a few days in a row multiple times and it never bothers me. If it’s good and I like it I’m all good!

    I am so obsessed with mangoes right now and actually every summer, all summer. I have like 7 on my countertop right now! They are so amazing! I have to make that sorbet!!!!!! Looks amazing, especially if layered with the coconut ice cream!!! Extra amazing!
    The other day I was looking at my spice cabinet and t looked like Hoarders needed to come and have a chat with me and toss stuff. I am SO psycho with clutter and when I get on a rampage I have no prob getting rid of stuff. but my spices for instance, I just keep thinking, well, it smells good still even though I dont use it ever. So the other day I just starting tossing things I dont use to make room. I dont know if that is bad or good? But made me feel much better!
    I totally get those Dr. Preachers patties. I think they are really good and the ingredient list is pretty good! I eat the same thing for 2 days all the time! Well, actually, I take it back, I eat all the leftovers for lunches and ususally dont repeat dinners, but sometimes I morph one thing into something else, like Chili night into taco salad night or something like that. πŸ™‚ I know that was just unbelievably genius. C’mon now. haha

      Haha, come to Philly and help me with my cabinets. Pleeeeeasssee???? I probably have spices and crazy stuff I have never used in there from when we moved in taking up space in the back. I am a mess πŸ™

      You are genius though, I am not a rollover meal person and I need to be!!! I just eat it the same and then I’m done.

    I don’t think I got to comment on your pictures, but they look great and I don’t know why you were worried at all! You’ll be super glad you did them down the line.

    Good tip for timing. I do really bad with heat… although if only I’d be lucky enough to get it right, ha ha!

      Thank you! I’m not worried at all. What I said was I wanted to do those pictures but at a certain point in my pregnancy I said forget it because I wasn’t feeling like doing them. I was worried I would regret NOT doing them, so I decided last minute when I was having a good day to get them taken and was happy the photographer could fit me in πŸ™‚

    My local grocer has a huge box of mangos on special and I’ve been tempted..now I definitely need them:) That sorbet looks awesome!

    weird thing is I’m into pumpkin right now..ya I’m way behind on my latest addiction..mmm! I eat VOO every morning now..and I actually look forward to it ..still!

    I’m thinking about doing a CSA or food delivery too as we are shortly becoming a 1-car family and so I won’t be able to travel around as much. I find with cabinet organization I literally just have to start moving things around and then I’m in the zone for the rest of the organizing:) All the best!

    I love the sorbet idea! I usually buy frozen mango at TJ’s and never know what to do with it and love me a cool treat on a warm day! I’ve been meaning to try that coconut milk ice cream. I wrote to So Delicious and got a bunch of their coupons and one of them is for that but I’ve yet to find the ice cream anywhere, boo!

    We love mangos over here as well!!! We have also found that Asian Markets get BIGGER mangos. Perhaps TWO TIMES the size of ones at health stores. That looks so yum. We might have to do this! We eat the same thing for three days and then switch it up. It is cheaper and tasty!
