Lemon-Basil Cucumber Smoothie

This smoothie is perfect for hydrating after a tough workout.

It’s cleansing. Immune boosting. Energizing. Delicious.

Lemon and basil both work as a digestive aid and liver cleanser. Cucumbers are very hydrating and have both antioxidant and anti-inflammatory properties. I used coconut water, which gave the nutrition even more of a boost {like we discussed the other day-here’s another use for it!} and it turned out amazing!

This was the perfect recovery drink after taking spin class for the first time in…ummm… over a decade?

You see, it’s tough to get to classes I want to take because my personal training schedule always seems to conflict with them. I also used to HATE spin. I’ve been wanting to give it another go though.

Then, this week,  I had a last minute cancellation  and decided to just hit  up the gym; and noticed I actually got there before spin started. And, there were still seats available! Awesome. My butt bones are sore as hell. I was dripping sweat after class and loved it. I foam rolled and did a really bi’s and tri’s workout after, then got home to make this recovery smoothie. Thi is also great while I nurse since I don’t really have time to prep once I get home and Ella’s ready for me. She and I usually have our “liquid lunches” together, then I prep our “solid” lunch to have about an hour later.




Lemon Basil Cucumber Smoothie

serves: 1

14 ounces of plain coconut water

1 small lemon

1/2 of a medium cucumber

1/2 cup {medium packed} basil

1 scoop of plant based protein powder



Squeeze the juice out of the lemon. Pour all ingredients into a blender and blend on high. Pour and serve & enjoy immediately.


I picked up some fresh basil for pizza night the other night. We both made our usual’s {this was my old usual coming back even better…I have been making this one recently}- but I decided to make a few slight changes the old favorite and it’s now better than ever.


Michael hands down makes the best caramelized onions, ever. The trick is to slice the onions as thin as you can, put them in a small pan, olive oil on top, cover it with a lid and stir frequently until they are melt in your mouth good!

Instead of using pizza dough, I found a much healthier alternative. And in my opinion, even tastier! I love thin crust…the thinner the better! That was my only complaint with the multi-grain dough we usually make, I could never get it thin enough! So we decided to try these:


I brush a little olive oil on them, then I soften some goats cheese and spread it around so some areas are thicker than others. Then I used some Italian seasoning and roasted garlic (I actually just used garlic gold Italian herb nuggets, which are amazing, but you can do the former. I also added some fresh chopped basil leaves.


I top it with about 2 cups of spinach either tossed lightly in olive oil, or sprayed with my misto. Then the onions go on last. I bake it on a pizza stone (I don’t think it makes a difference when not using the dough, but we still like to use it) for 8-10 minutes. It’s so crispy and delicious. Michael likes to steal a slice of mine when I’m not looking. So rude.


I highly recommend.

I really want to try having an herb garden this year, but I always kill plants. This is part of my 100 Days Til’ Summer “to-do” list. A green thumb. Hopefully someone can shed some light on the matter for me. I ‘d love to always have fresh herbs around. My balcony doesn’t always get great sun, early in the morning but there are lots of trees, then I feel like we get annoying bugs on the deck when there are plants, and bees—which I’m allergic to. Thoughts? Help?!!

Ella and I did a photo shoot for her birthday party invitations. We got them and they are SO cute!

One of my clients is a semi-professional photographer (she’s a doctor but also an amazing photographer by hobby) and she recommended them. The color/quality is fabulous and the prices are even better!!! I tried to order through a few of the popular photo sites, the ones that always run deals…and even after a coupon code and gift cards it still was almost $80. for lower quality invites!

I am FINALLY getting back to a power yoga class Friday morning…so stoked! I haven’t been in a few weeks! I need a pedicure though…hopefully no one judges my toes :/

    The smoothie looks/sounds awesome too! Sounds like a great combo—I never put basil into drinks until I copied a strawberry basil mojito from a restaurant last summer…and I’m totally hooked!

    Have fun at yoga! I’m going too! My toes are also an embarrassment…and I’m hoping that going to class without a pedi will shame me into getting one! ha.

    That drink looks SOO refreshing. I’ve never been brave to add basil to a drink, but I actually think I’d like it.

    Love the pictures on the invite! I cannot believe Ella will be turning 1 soon! SO crazy how fast that went!

    I love the combo of lemon and basil. It’s used often in many simple Italian dishes and always makes everything taste so refreshing and light!

    Glad you got to try out another spin class. I haven’t been to one in a while, but loved them when I did go to them!

    ooph! you know i haven’t taken a spin class in about 8 years so i’m darn near due for one aren’t i?! that smoothie looks absolutely refreshing! i did something today that i never thought i’d do but i needed to use up a couple stalks of dino kale before they rotten. i put them in my choco hemp smoothie and thank god couldn’t taste it since i loaded it with stevia and frozen banana 😛

    on the ella front, laury i love her headband and dress. she looks like a mini flapper so cute!

    I havent made homemade pizza in forever which is just straight up depressing. And when I did I never made carmelized onions although I love all things onions so I think pizza is going to make an apparance soon with carmelized onions of course!!

And that smoothie sounds so refreshing I have been obsessing with cucumber and lemon juice in juices/smoothies lately! And yum to that goat cheese pizza. I am loving on goat cheese right now.
