Egg Sandwiches

Hey there!

I have a quick minute to let you all know I am still alive Smile

and eating my favorite fried egg sandwiches again…


A few weeks ago Julian’s Bakery had a sale and I got some Paleo Bread for $2.99!

Grain-free, starch-free made of coconut flour!


ingredients: purified water, Organic Coconut Flour, Egg Whites, Psyllium, Organic Apple Cider Vinegar, Baking Soda.

40 calories per slice, 1 gram of digestible carbs, 1 gram of sugar and 5 grams of fiber! How amazing are the stats!?

At first, when I tried a little iffy about the bread. It was kind of chewy and had a little bit of a funky taste. Toast it up and drench it in runny egg yolk though, and it is pretty damn good!



Remember recently how I recently switched this amazing raw coconut water?


Good thing I did! I don’t drink coconut water that often. There are some great benefits, and I do whole-heartily believe it’s 1,000 time better than Gatorade.

However, you should be aware of buying some of the other brands of coconut water on the market. Especially some of the flavored ones, there are some iffy ingredients.

You want to get coconut water STRAIGHT from the coconut. The raw harmless harvest, yet expensive, is the next best thing! I keep it around just for those times I need some extra hydration, or for Ella in case she gets sick. It definitely has helped in the past!

I don’t have much I can share about the home-stuff for now. All I can say is we have been so busy all week getting our place ready and organized. We have a few showings and keeping our fingers crossed! Ella is a great little sales baby. Wish us luck!

    While I’m leery of that bread (though I have a can of coconut flour at my desk…), that runny egg photo really just sells the whole thing. I think I know what I’m having for dinner tonight…

    I heard about this Paleo bread from a friend but have not seen it in South Africa yet.
    I love how you advocate that the coconut water needs to come from the coconut itself and not be the flavored ones – so true.

    paleo bread, that’s really amazing. I don’t think I’ve ever seen that in any store, but for sure I’m gonna start looking for it. I love anything with coconut anyways. And coconut water is just really delicious and refreshing!

    never had paleo bread! i have made a version of flax bread though, very skinny slices though since it doesn’t really rise all that much. i love eggs! i have them prob 3-4 nights a week haha. easy dinner!
