Double Chocolate Walnut Biscotti

Munchkin was even excited about how much EASIER it’s going to be to bake this year!

First order of business….making biscotto:

they may not be extremely photogenic, but they taste out of this world!! I was never a biscotti fan, however–these are softer than the norm (I cook them less time), and the double chocolate-walnut flavor is simply hard to resist!!! The perfect combination of sweet and savory πŸ™‚

I realize I used the “wrong attachment” for cookie dough..I’m new at this kitchen aid thing, I’m used to my hand held πŸ™

Double Chocolate Walnut Biscotti

1 cup whole wheat flour

1 cup unbleached all purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

3/4 teaspoon salt

6 Tablespoons Earth Balance Butter, softened

1 Cup Natural Sweetener of Choice (evaporated cane juice, raw sugar, agave, etc)

1/2 teaspoon vanilla

2 large eggs

1 cup chopped walnuts

3/4 cup semi-sweet chocolate chips

1 Tablespoon Powdered Sugar (to sprinkle on top)

Preheat oven to 350 degrees. Whisk flours, cocoa powder, baking soda and salt in a bowl, set aside. In separate bowl beat butter, sugar and vanilla until creamy. Add eggs one at a time just to combine. Slowly start to add the flour mixture to the cream mixture while beating until a soft dough forms. Stir in walnuts and chocolate chips.

With floured hands, separate dough evenly and create two logs that are 12 inches in length and 2 inches in width and place on a parchment covered cookie sheet (or greased cookie sheet). Bake for about 28 minutes, then take out and let it cool for 5 minutes. Slice the biscotti diagonally into 3/4 inch slices and place back into the oven for 5-7 minutes. Keep in air tight container. You can freeze these for up to 1 month, refrigerate up to a week.

These were a HIT last Christmas, everyone was asking for my recipe…so that’s gotta tell you something πŸ˜‰

      They are not “soft” like a soft baked cookie…but not like the traditional biscotti that you need to dump in a latte to be able to bite it! The key is baking it less time after you slice it, I only do 5 minutes then let it cool on the cookie sheet! They were very popular πŸ™‚ Let me know what you think!

    I love how you made pretty healthy biscotti – I have to try that. I love making biscotti and made 2 kinds things year, but I just made white flour, white sugar. I have to try adapting it now that I know it’s good! How amazing is that mixer? I love mine too!

    I LOVE biscottis! I just posted my Christmas Menu, I am keeping it simple and easy this year because I don’t want to spend my whole day in the kitchen! I did all my food shopping today so I can avoid all the crowds later in the week!
