I hope you all enjoyed the weekend! Who watched the Superbowl? Aside from Xtina messing up the National Anthem (I mean, come on, I love you, but..how many times have you sung it, girl?) I thought that the Puppy Bowl was more exciting:
my favorite part of course is the kitten half time show 🙂
However, I only ended up watching the first half of the Superbowl before catching up on GLEE season 2 on my DVR ( am NOT finished so NO spoilers PLEASE!). I went to my moms for the second half of Puppy Bowl/ First half of the Superbowl. Michael went to his friends house to play poker and watch the game. He said that the second half got really exciting. At that point I was really into GLEE. There was no turning back :/
I brought some Kale Chips & White Bean Dip along with some Multi-Seed Crackers to my moms. Also a delish chocolate cupcake recipe I will share at the end of this post. There were SO many things that I wanted to make. Including Morgans Seitan and Buffalo “chiken” Ranch Wraps. Unfortunately I was non-stop all weekend, and realized I needed more cheese cloth, and down to my last drop of hot sauce. Boo. I had no time to run out 🙁 I still can not wait to make it though! Drooling hasn’t stopped since I first saw her post.
If you ever make these Kale chips and the Dip I want to make a note that you can’t actually “dip” the kale chips like you could a cracker. To offer as appetizers, you want to get a spoon. small knife or a pastry bag, lay the kale chips on a plate, ad dollop a little dip on each. Or guests can spread it onto the chip using a mini spreader. They are great by themselves too 🙂
Sunday morning Michael and I took his grandmother out to breakfast, then went over to IKEA for the piece of furniture to solve all of my space/storage issues. I am making my office/den into a baby room. However, at this point the room is a disgusting mess. Computer, printer, books, papers, papers, papers, papers, filing cabinet, litter box, dust (that comes back every day and I can’t stand it), and so on. I can not WAIT to clean out this room. However, I needed somewhere to PUT all of my stuff before I do so. We do not have a lot of space. I don’t want my computer in my bedroom, and I do not wat all the wires, stuf, etc in my living room. I can’t do ANYTHING with the baby room until I have a place to put all my crap. So….I insisted we get this:
It closes up, so it will hide everything. I can put my printer, computer, some of my files and papers all in here. It will fit nicely in the corner of my living room. The first time I saw this was in my neighbors house. They bought it when they put their condo on the market to “hide” the eyesore that is your computer and everything that comes with it. It looked great, and I thought it was an awesome solution for our small space. My mom and brother are coming over tomorrow to help me put it together. Right now there are two HUGE boxes in the middle of my living room. I came home this morning to do some yoga, and completely forgot about that obstacle 🙁 Guess I need to venture back out to the gym.After I reluctantly do some cleaning around here. I can’t even explain how tired and lazy I am feeling these days. But I MUST keep moving! As hard as it may be. As much as I would rather go crawl into my bed. I have to fight the hormones, and MOVE! Damn you, third trimester. Bye, bye energy 🙁
Before I head back out I want to share with you the chocolate cupcakes I made for the Superbowl yesterday……..
This is a great Valentine’s Day Recipe! I think I may make a half batch of this, and a half batch of my All Natural Red Velvet Cupcakes to share with my loved ones 😉
Chocolate Frosted Vegan Cupcakes
3/4 cup Whole Wheat Pastry Flour
3/4 Cup Unbleached All Purpose Flour
3/4 Cup Unsweetened Cocoa Powder
1 tsp baing powder
3/4 tsp baking soda
3/4 tsp salt
1 Ripe Avocado, pitted and scraped out
1 Cup Maple Syrup or Brown Rice Syrup
3/4 Cup Coconut Milk
1/3 Cup Organic Apple Sauce
2 tsp Vanilla Extract
Preheat Oven to 350 degrees. Line a 12 cup muffin tin with liners. Whisk together flours, cocoa powder, baking powder, baking soda and salt. Set aside. Puree avocado in a food processor until smooth. Add the maple syrup (or brown rice syrup), almond milk, apple sauce and vanilla and blend until creamy. Pour wet mixture into dry mixture and stir until fully combined. Spoon batter into muffin liners and bake for about 20-25 minutes, or until a toothpick comes out clean. It was 22 minutes in my oven, but oven times may vary.
4 ounces Vegan Chocolate Chips
1 T Coconut Oil
1/4 Cup Hot Water
1 tsp Vanilla
1 1 /2 cups Powdered Sugar, sifted
Melt chocolate and butter over low heat. Transfer to a bowl and add hot water and stir, Slowly sift in the powdered sugar until you reach a desired consistency. Ice the cupcakes immediately once they are cooled down.
What did you think of the Superbowl commercials?
From what I saw the creepiest was definitely the Doritos commercial. where the guy licked his co-workers finger. The cutest was the Darth Vader VW commercial. I heard about a tire commercial with a Beaver that sounded really cute, but I missed it.
