Chocolate Mousse Tart Gifts

This time of year it’s so easy to get caught up in the energy of others around you. Excitement, tension, stress.

Since becoming a mother and now embarking on my journey as a yogi I have become much more patient. You see, I was probably one of the least patient people you would ever meet. Road rage, line rage, short fused. I have gotten much more laid back in my later years…but the old me creeps out every now and then. My Pop Pop, who was a Navy  in WW2 used to babysit me when my mom and grandmother were at work. I remember we would go out to pick my grandmother up and on that short ride I would hear him try not to curse like a sailor the whole way there (at other drivers)> If I didn’t inherit my prior road rage from him, then I don’t know what.

Pregnancy really did calm me. Then there was E and I just got a lot more patience. You have to when you’re a parent! Road rage has calmed down significantly.

Well. Fast forward to this morning. I was tested. I left my house extra early to allow for local rush hour traffic. I have to drop Ella off and then head to my client. 15 minutes in the same spot only to find road work at 8:00 AM. What!?? This is pretty much my ONLY way to get to where I need to go; the other way is a 15-20 minute detour. You can imagine my patience being tested. If I am late it messes up my entire schedule that day, and my clients days. Not good.

As I drove past 12 construction trucks  the poor guy with the stop sign I rolled down my window and said “During rush hour guys…really?”

They’re testing me. And I’m such an ass.

Later I found out it was a water main break. Yup. Me. Ass.

The universe reminding me that you can not stress out over things that are not in your control. And to shut my GD mouth. Things like this are so trivial, and not in my control–so I just need breathe and let it be what it will be. The guy sitting at the green light in front of me today until it turned red again because he was text messaging and ignoring people laying on their horns…including me…breathe. Smile. Get over it. Hope he gets the hell off his phone while driving or that a cop sees him since it’s illegal in our town.

Yes, my job is important and being late is unprofessional—but it is what it is. I can’t always predict the traffic. Or water main breaks. Or people being idiots on the road.

I here on out vow to put out positive energy no matter what life throws at me. Well, I will try to.

I was reminded today just how much you need to stay present and focus on the positives that are thrown your way each day. Like smiling at the checkout kid and asking him how his day is going to see him light up because the two other customers in front were extremely rude to him.Seeing the guy with headphones sing his heart our waiting for the bus, dancing around having the time of his life. Getting a nice email or a phone call from someone. Micheal’s smile. Ella’s sweet face.

Anyway.

I came to my first client bearing gifts, which made up for being 15 minutes late

I get the chance earlier in the week to make these, but some of my mid-end week clients got a little treat (I’ll have to make more for next week). If you don’t know by now, my favorite healthy dessert is avocado mousse. I am known for adding coconut oil to firm up the texture, but recently I added coconut butter as well, and man—it’s heavenly.

I found these pretty disposable tart/muffin cups at TJ Maxx $3.99:

There’s one variation or another of this on here a million times but I will just repost the whole thing exactly how I did it here.

I will talk about this another day—but I am trying to get off the stevia. Last time I did a sugar detox my taste buds really changed, for the better! Then I gave in and started using stevia to avoid sugar all together, and now they are hyper sensitive again. Bummer. I would not serve stevia to guests or clients since some people think it’s fo nasty. I like it but lately it’s just not something I want to use so much of. It’s the holidays, and I’m going to eat some sugar And I’m going to enjoy it. Probably feel sluggish, probably break out, but it’s once a year I get to eat cookies for lunch when I bake Winking smile . My motto is, just enjoy it…eat a little less at meals if you have 8 cookies one day and hit up the gym on the regular. Avoid GMO sugar by choosing more natural and organic sources like sucanut, coconut palm sugar, maple syrup or raw honey. I avoid brown rice syrup, which is popular in the natural world, but there’s the whole arsenic thing—no thanks. Next week I am going to start working on retraining my taste buds again!

Chocolate Mousse Tart

You can always cut this recipe in 1/2 or in 1/4 to make less!

Chocolate Mousse Tarts

makes: 4 mini cupcake tarts

ingredients:

crust:

  • 1/2 cup raw almonds (to healthify more do 1/4 hemp seeds and 1/4 nuts)
  • 2 Tablespoons coconut oil
  • 1 Tablespoon unsweetened cocoa powder
  • 3 Tablespoons raw honey or maple syrup (or 15 drops stevia)
  • 1/4 teaspoon sea salt

filling:

  • 2 ripe avocados
  • 2 Tablespoons unsweetened cocoa powder
  • 1 Tablespoon coconut oil
  • 1 Tablespoon coconut butter (or more coconut oil)
  • 1/4 cup raw honey (if you would like to use stevia it’s about 1/2 teaspoon if you nix the maple syrup as well)
  • 2 Tablespoons maple syrup
  • a pinch of cinnamon

directions:

place all of the ingredients for the crust in a mini food processor and process until a sticky crust forms. You could add more coconut oil as needed. Press the crust evenly into the four muffin cups and place in the refrigerator.

Add the ingredients for the filling to your high speed blender or food processor and process until it’s very creamy, scraping the sides of the machine as needed. Fill the muffin tins and cover. Allow them to set in the refrigerator for at least 2 hours.

Optional: garnish with hazelnuts, chocolate chips, or chopped nuts.

It’s the PERFECT little healthy gift when you wrap it all pretty and tie a bow at the top!

In other news….

If you haven’t downloaded the free app “Fooducate” what are you waiting for!?? It has a barcode scanner to help you avoid GMO’s in your food. For now you can take a screenshot of this to check when you want to read labels! Feel free to share it too!

Avoid GMO's When Shopping with This Guide

^Look for the organic label when it comes to these ingredients to avoid the GMO version! Or use the app to do the work for you.

Aaaaaand here’s my quick treadmill HIIT workout I posted to instagram earlier:

Perfect for a quick high intensity workout to squeeze in between the madness…and the cookies 😉

If I don’t talk to you all…Happy Holidays!

We are having company here this weekend, then my mom has a party Xmas eve. I have a million things to bake and cook—and do to get my house ready. I love it all.

PS—All I want for Xmas is for someone to revamp my blog, for free. Any takers?

How do you stay chill during stressful times? Do you let the energy around you take over?

I used to be so impatient too, albeit where I live it’s more to do with the mums pushing their strollers in such a way that you have to hop off the sidewalk into the road. I used to get to worked up about it! And then I decided I didn’t want to take on their mood. So I decided that no matter what, I would smile at people as they went by, almost just to save my own mood, but also because clearly our world needs a little more friendliness and a little less aggression. Anyway, after a week or so of doing this, a man in the grocery store said something that was supposed to be a joke to me (was actually fairly rude), but by this time my second nature was to just look up and smile! He looked so freaked out by my reaction that I almost had to stop myself from laughing 🙂

I so agree. I love how you did that, it’s really good practice to just smile until it becomes seconds nature! I live in the Philadelphia area where people are really just miserable. I had a friend who went to UNC and would visit him often and it was like a whole other world down there! SO much more friendly. We’re not all bad–and if I practice what you did maybe it would rub off 😉

I was in Bed Bath and Beyond today and a woman forgot her coupons…I gave her one of mine and you would have thought I handed her $100 bucks haha.

    Merry Christmas to you too!
Your banana protein muffins are part of my holiday travel survival plans — I made baggies with the dry ingredients and a blob of coconut oil. All of my relatives will have eggs, milk, and bananas, so I’ll be able to whip up a healthy breakfast or snack every day away from home!

a situation like that happened where i was the victim the other day. some man yelled at my coworker and i about not using a crosswalk and sped up to nearly hit us. however, he was the dumbass because there WERE NO crosswalks in the area we were walking. i just said i’m sorry and i hope your day gets better!

i am trying to reinforce perspective at all times right now. it is way too easy to get caught up in the hype so i have just been mentally compartmentalizing things that could/would/should make me elicit some huge response and then i just breathe 🙂

I left out the part where that road is closed on and off with no warning for MONTHS. And it’s a main/busy road. It will be closed for a week, the open for 3 months, then closed on a random Saturday..very annoying.

Anyway…yes, some people just have no patience! It is important to just remember to breathe and not sweat the small stuff 😉

I think what you posted made a great deal of sense. But,
consider this, what if you were to create a killer title?
I mean, I don’t wish to tell you how to run your blog, but suppose you added a post title that makes people desire more?
I mean Chocolate Mousse Tart Gifts is kinda plain. You could look at Yahoo’s front page and watch how they
create news titles to grab viewers to click. You might add a related video or
a pic or two to get people excited about everything’ve got to say.
In my opinion, it might bring your posts a little bit more interesting.
