I must admit, I do think V-Day is a Hallmark holiday. Yes, it’s nice to get flowers and chocolate or whatever. But it is over-hyped. Both of my M boys get lots of love from me daily.

Today is one of the most exciting days of the year for me. Not because it’s Valentine’s Day. But because I know Spring is right around the corner. How do I know that, you ask? Because these handsome guys officially start Spring Training today:

Michael and I had a decent weekend. We went out to dinner Friday night to celebrate Valentine’s Day. I was going to make a batch of these All Natural Vegan Red Velvet Cupcakes:

But we got our sugar fix Friday night with a gourmet dessert to-go (traditionally while watching Jersey Shore) so I opted not to.

I did, however, make some delicious bars to snack on! Some carb absorption slowing chia seeds were the basis of this recipe.

I’ve been more aware that I need to have a snack or something on me when I am out running around. My appetite felt like it got out of control several weeks ago, but I really think it slowed down. I am definitely eating. Not like a piggie though (the rapid weight gain is supposed to happen NOW). I do BEST with small, frequent meals. Or else, I get REALLY full, and the heart burn kicks in. I have been getting really full, really fast lately with not that much food (something to do with my over sized uterus perhaps?). If I over-do it, I get this burning sensation in my throat. Pregnancy heart burn is not like normal heart burn that you get from eating something you shouldn’t have. I really never got heart burn, and the first time I got it during this pregnancy, I was freaked out. Heartburn during pregnancy is so common for one reason, hormones. Particularly progesterone can relax the valve that normally prevents stomach acid from backing up into the esophagus. It may also have something to do with the fact that the baby is making everything pretty cramped as far as my organs go. It’s not fun. I avoid it by eating aΒ  little at a time. For this reason, I need to have a small snack on me for every couple hours. So instead of cupcakes…I opted to make some bars to snack on during the work week:

Chocolate Chia Energy Bars


1 1/2 Cups Pitted Dates

1/3 Cup Raw Cacao Powder (or unsweetened cocoa powder)

1/3 Cup Chia Seeds

1/2 tsp Vanilla Extract

1 Cup Slivered Almonds


Puree the dates in a food processor or Vitamix to make a date paste. Then add cacao/cocoa powder, vanilla extract and chia seeds. Pulse until combined. Then add the almonds and pulse until they are well distributed.

Spread a sheet of wax paper on a hard surface and pour mixture out on it. Use paper to press the mixture into a 1/2 to 3/4 inch rectangle.

Wrap very tightly (I added a layer of saran around the wax paper to make it very tight) and chill it overnight. Cut it into 6-8 bars the next day. You can use oat flour to dust the bars to prevent sticking.

Chia seeds are one of my obsessions (if you haven’t noticed). Their benefits are amazing. They are loaded with antioxidants, calcium, protein, fiber, and vitamins including calcium, phosphorus, magnesium, manganese, copper, niacin, and zinc. Other benefits include:

-slows the absorption of carbs–great for diabetics

-great for hydration/ especially post-workout

-Reduces Blood Pressure

-Aids in Weight Loss

-Richest Plant Source of Omega 3β€²s (an essential fatty acid)

So get your ch ch ch chia on, yo!!!!

It was a good show. Michael admitted to me last night that he has Beiber fever πŸ˜‰

Michael and I always go out early to avoid the mayhem. Friday night was close enough, but far enough away to avoid crowds. Twas’ perfecto.

    Happy Vday:) I am super psyched for spring training and i was begging my boyfriend to take me to a game as an early b-day or whatever present since clearwater is pretty close to his parents house. I always wonder how me the sports junkie could have a boyfriend that hates watching sports lol i guess thats better then him liking a rival team.

    Yay chia seeds! I always put them in my oats in the morning and they are good to put in cereal to give it more oomph!

    Happy Valentine’s day Laury. Hope Michael and Munchkin look after you well today. Just back from walking into town, I bought myself some treats since I’ve no prince yet. Love chia seeds and how they change the consistency of recipes. That recipe looks wonderful.

    Those chocolate chia bars look great. That would probably be a great way to use up all these dates that I have in my cabinet too! Plus, Nick would probably eat them since he love himself some Larabars.

    We intended to go to this vegetarian cafe yesterday for brunch/lunch to have some time together, but before we left, Nick checked their website and saw that they are closed on Sundays. Total bummer :(. I don’t remember the name of the place, but the menu looks awesome. It’s in South Hampton.

    So I woke up this morning and your post was sitting in my inbox. Twas DIVINE! Happy Valentine’s Day. I LOVE Valentine’s Day, I always have. My Dad would do something special for my Mom and then he would bring home my sister and I a pink rose and a small box of chocolates. It was super awesome! I LOVED it. I might need to pick up the ingredients to make those while Gooner and I am gone and Q is here bachin’ it!

      My dad always got me and my sis presents too! So fun. I always got excited over V-day. I think it lost it’s luster after Michael and I got married. I think when I was younger the “will I get flowers, or a present from a guy” was exciting. Now, my loving is expected πŸ˜‰

    Happy Vday! Heartburn is no fun!! When I used to have serious anxiety/ ED I would get it every night…no joke. I stopped eaitng and lost 5 lbs bc of it!

    Thanksfully I found ways to calm down and now only get it on occasion, usually the week before my period. I imagine how bad it will be during pregnancy. Ug.

    I also share a chia seed obsession–so I’m pretty sure I’d love these bars! Question for you: do dates ever overload your vitamix? When I tried to blend dates in my vita, it overloaded and shut itself off!

      Hmm, no dates never did this. Are you using pitted dates? one of my clients jammed her Vitamix bc she accidentally used dates with the pits in them. The only time my Vitamix ever got jammed was when I over loaded it with veggies and beets that were not cut up enough!

      EEEK is right! Well, refined sugars can be tough, but not that tough. No added sugars, even natural sugars would be REALLY tough. One of my first things to do post baby! XO

    Energy bars are awesome. I really need to get in the habit of making them again! Yum!

      I’m sure they will work as far as the stickiness, just soak them a bit…but not sure of the taste. It’s definitely worth a try! Let me know how it goes!
