Did I ever tell you about the time I started drinking coffee again?
I’ll spare you the debate on antioxidants, and health benefits vs. how acidic it is. I‘ve always been on the fence with the health benefits and if they outweigh the negatives (so when clients ask me they never get a straight answer, more of “don’t drink too much of it, and watch what you put in it, black is best, etc)—I can definitely tell you one thing for sure though: I love coffee. I love the smell, the taste … the pick me up. But mostly the smell. Yum. Oddly enough I could always take it or leave it. Loose teas have been my go-to and love for years.
I figure I’m not drinking four cups a day, and has given me the little boost, focus and stimulation I’ve been needing lately. Wheatgrass just isn’t cutting it at this time.
When my family and I were at the mall last week and Boscov’s was having their annual tent sale. I saw a French press for $9. bucks and had to grab at it.
From time to time I will have a coffee, but I was never one to “need” a cup first thing in the morning. Lately, however, I have been craving some. I refuse to buy overpriced coffee at a unnamed popular chain, especially because I don’t prefer to drink it black (but I can)—and am not too keen on any of the options (soy milk, non-organic creamer, sugar, aspartame, etc.). I remembered seeing a homemade coffee creamer on Gena’s blog a while back, and thought it looked delicious! I make my own nut milks pretty often, so it’s pretty much the same thing with a little tweaking! It’s much more delicious than the store bought, but it doesn’t last as long. Making smoothies daily now has actually helped me to drink it up!
As far as non-dairy creamers go, I find many of the store bought ones are a little too processed for my taste. So I decided to make my own! I am obsessed. (Update: I have been using grass-fed heavy cream from my farm or Natural by Nature brand, no fillers or gums!)

Homemade Dairy-Free Coffee Creamer
adapted from: Choosing Raw
- 1 cup raw almonds or cashews, soaked for at least 6 hours (the longer the better)
- 2 cups filtered water
- 1 heaping Tablespoon coconut oil
- 1 teaspoon vanilla extract
- a pinch of sea salt
- 2-3 dates or stevia, to taste
Soak almonds overnight, or for 6 hours at the least. Strain almonds and add them and two cups of filtered water to a Vitamix or high speed blender (if you have a weaker blender soak your almonds for a really long time) and blend on high for about 2 minutes. Then, pour the liquid over a cheese cloth or nut milk bag into a bowl and “milk it” until all of the liquid comes out. Then, either discard the “pulp” or set-aside/freeze it for later. Pour the liquid back into your Vitamix/blender and add in the vanilla, dates/stevia, coconut oil and sea salt. Blend on high until combined. Store it in an airtight container, but not before you “test” it first! It tastes amazing when it’s freshly blended!
I work on the road, and now I have this dilemma of all of these liquids I am taking down in the AM. Lemon water, a smoothie and now coffee?

How delicious does THAT sound? Well, if you disagree, you don’t know what’s good. It sounded pretty fantastic to me.
I actually can’t wait to make this again tomorrow morning. I needed a break from green smoothies anyway. Meanwhile, once the weather breaks I will be going back to a warm breakfast so I may as well live it up now (can’t wait to share my grain-free hot breakfast with you all!).
Café Mocha Protein Smoothie
- 1 Tablespoon coffee beans
- 1 Tablespoon raw cacao, carob powder or unsweetened cocoa powder
- 2 TBSP collagen hydrolysate (I like Zint or Great Lakes)
- 1 scoop egg white protein powder (update, I use THIS protein more recently)
- 1 small frozen ripe banana
- a dash of cinnamon (I prefer the Vietnamese cinnamon, there is a difference!)
- 10 ounces of homemade coffee creamer (or milk of choice plus 1/2 Tablespoon coconut oil) or raw grass-fed milk from a trusted farm
Place all ingredients into a high speed blender and blend on high until frothy. Enjoy immediately!
So now you know about the time I started drinking coffee again. Your lives must feel so complete.
