Did I ever tell you about the time I started drinking coffee again?

 

I’ll spare you the debate on antioxidants, and health benefits vs. how acidic it is. I‘ve always been on the fence with the health benefits and if they outweigh the negatives (so when clients ask me they never get a straight answer, more of “don’t drink too much of it, and watch what you put in it, black is best, etc)—I can definitely tell you one thing for sure though: I love coffee. I love the smell, the taste … the pick me up. But mostly the smell. Yum.  Oddly enough  I could always take it or leave it. Loose teas have been my go-to and love for years.

I figure I’m not drinking four cups a day, and has given me the little boost, focus and stimulation I’ve been needing lately. Wheatgrass just isn’t cutting it at this time.

 

 

When my family and I were at the mall last week and Boscov’s was having their annual tent sale. I saw a French press for $9. bucks and had to grab at it.

From time to time I will have a coffee, but I was never one to “need” a cup first thing in the morning. Lately, however, I have been craving some. I refuse to buy overpriced coffee at a unnamed popular chain, especially because I don’t prefer to drink it black (but I can)—and am not too keen on any of the options (soy milk, non-organic creamer,  sugar, aspartame, etc.). I remembered seeing a homemade coffee creamer on Gena’s blog a while back, and thought it looked delicious! I make my own nut milks pretty often, so it’s pretty much the same thing with a little tweaking! It’s much more delicious than the store bought, but it doesn’t last as long. Making smoothies daily now has actually helped me to drink it up!

As far as non-dairy creamers go, I find many of the store bought ones are a little too processed for my taste. So I decided to make my own! I am obsessed. (Update: I have been using grass-fed heavy cream from my farm or Natural by Nature brand, no fillers or gums!)

Homemade Dairy-Free Coffee Creamer

adapted from: Choosing Raw

ingredients

  • 1 cup raw almonds or cashews, soaked for at least 6 hours (the longer the better)
  • 2 cups filtered water
  • 1 heaping Tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • a pinch of sea salt
  • 2-3 dates or stevia, to taste

directions:

Soak almonds overnight, or for 6 hours at the least. Strain almonds and add them and two cups of filtered water to a Vitamix or high speed blender (if you have a weaker blender soak your almonds for a really long time) and blend on high for about 2 minutes. Then, pour the liquid over a cheese cloth or nut milk bag into a bowl and “milk it” until all of the liquid comes out. Then, either discard the “pulp” or set-aside/freeze it for later. Pour the liquid back into your Vitamix/blender and add in the vanilla, dates/stevia, coconut oil and sea salt. Blend on high until combined. Store it in an airtight container, but not before you “test” it first! It tastes amazing when it’s freshly blended!

 

 

I work on the road, and now I have this dilemma of all of these liquids I am taking down in the AM. Lemon water, a smoothie and now coffee?

What about a coffee smoothie?

 

How delicious does THAT sound? Well, if you disagree, you don’t know what’s good. It sounded pretty fantastic to me.

 

I actually can’t wait to make this again tomorrow morning. I needed a break from green smoothies anyway. Meanwhile, once the weather breaks I will be going back to a warm breakfast so I may as well live it up now (can’t wait to share my grain-free hot breakfast with you all!).

 

 

Café Mocha Protein Smoothie

ingredients:

  • 1 Tablespoon coffee beans
  • 1 Tablespoon raw cacao, carob powder or unsweetened cocoa powder
  • 2 TBSP collagen hydrolysate (I like Zint or Great Lakes)
  • 1 scoop egg white protein powder (update, I use THIS protein more recently)
  • 1 small frozen ripe banana
  • a dash of cinnamon (I prefer the Vietnamese cinnamon, there is a difference!)
  • 10 ounces of homemade coffee creamer (or milk of choice plus 1/2 Tablespoon coconut oil) or raw grass-fed milk from a trusted farm
  • ice

directions:

Place all ingredients into a high speed blender and blend on high until frothy. Enjoy immediately!

 

 

So now you know about the time I started drinking coffee again. Your lives must feel so complete.

    That smoothie sounds so good! I’ll have to give it a go one weekend soon, before summer is up.

    I do drink coffee – black and only one cup each day. It’s one of my indulgences and I sometimes get a nagging little voice saying that everyday is not moderately, it’s actually probably a bathtub’s worth a year, you know? But I figure we all have to strike our very own individual balances and some things I keep in my diet whether they’re deemed perfect or not, because they make the rest so much easier. Being a purist would be so stressful for me, which would likely cancel out it’s potential benefit.

      Yes, I totally agree. And I am still not 100% sold on how “bad” it is for you in moderation. The coffee bean does have antioxidants, and if you are choosing fair trade organic coffee…and drinking it black, I think you’re okay. There are worse habits!

    Oooh thanks for these! I love coffee, but also have a problem with the acid and recently started drinking half caf. I’m slowly trying to get down to the point where I don’t NEED it everyday but unfortunately I still do.

    Would you believe I don’t drink tea or coffee. I never have. Now if only I could cut out the diet coke, I stop,drinking it for weeks at a time and then go back to it. It’s horrid stuff but so addictive.

    You are so speaking my language here lady!! I love everything about coffee. Ive had to give it up for almost a month now (health related problems) but I seriously want it back!! The caffiene does nothing for me…I could drink an entire pot and fall right asleep and I never suffer from any headaches, I just love the TASTE!

    It’s official. We’re twins. I swear when I read your posts, I feel like I wrote the opinions! lol.

    Seriously, I’m coming over! No wait, you come here…we’ll make coffee smoothies and then go to the beach 🙂 That’s almost the exact smoothie I make.

    I drink one cup of coffee a day, and I usually put organic half and half in it, but I’d gladly switch to a homemade creamer—I’d actually try it today except my cousin eats like a truck driver and she doesn’t have a single kitchen implement that I need….for anything!

    I am trying to decide whether I want a keurig or just stick with tea for the mornings. There are a lot of mornings I’m just dead. Even after my workout. I am one of the ones who likes that “He Who Shall Not Be Named” coffee shop. While I get mine “skinny”, I like the worst one of all – White Chocolate Mocha.

    Coffee tends to do things to my stomach if I drink too much in one week. I limit it to one or two a week.

    I sort of want to be off all “stimulation” ingredients, but I’m not sure if I’m being unrealistic.

      Ohhh, my mom loves White Chocolate Mochas. I remember years ago she would get one daily and gained like 25 pounds. Then she cut them out and lost the weight! Those things are evil!

      Hmmm, I wonder with your GI issues if the acid in coffee is good for you at all? like you said?

      And it’s not unrealistic! But you should do it in baby steps. Tea is a good start though. Mate Vana is like coffee, has the caffeine and all but easier on your body! I used to drink that a lot!

        25 pounds? hahahahah! I only have one a week, not even that much nowadays. It’s something that has to be a once-in-a-while treat or it actually won’t taste good. I make it skinny, but it’s still too many cals.

        Sometimes it messes up my stomach and other times it doesn’t. I definitely need to find a skinnier coffee though.

        I want to not depend on anything to keep me going as far as caffeine. But it’s tough. We are in the hurricane’s path and I can’t promise pop tarts and peanut butter sandwiches won’t be eaten. hahah! I will say I’d have to be near death starving before I eat vienna sausages though!

          Yes, it may be even more. You don’t even want to know the sugar and calories in a white chocolate mocha. If you don’t know already!!!! I think it was like 1400 or something crazy, I was like no wonder she gained so rapidly!

    Not a coffee drinker but when I was recovering from a spinal headache and they encouraged caffeine (which affects me greatly) I drank 1 cup a day for a week (black). I do love the taste of cappuccinos (most people do) but I found just chugging down 1 black cup got me through it ha. I guess I could see how people get addicted though. IT was growing on me…but now I’m back to just water, almond milk, and lemon water (with a hint of stevia to make it taste like lemonade ha). I love your homemade creamer and coffee recipes though! May have to give them a whirl for when the in-laws come and NEED their coffee lol

    I’m with you girl — I loooove coffee. The smell, the taste, the slow sipping. Mmmm….

    Best coffee I’ve ever had was in Costa Rica — a peaberry blend I think. Second to that was the cafe au laits I had in France. So so good.

    Fave fair trade brands are from TJ’s and also from a local store called Fresh and Easy.

    I make almost that same smoothie most mornings! The cinnamon is key ; ) I’ll have to try it with a little coffee next time. I’m an occasional one cup drinker but with a busy 7 month old, I crave it more often too. Little hint: a handful of spinach does not effect the taste at all. I have to get my greens in at breakfast ; )

    Oh my goodness Laury, you are a genius!! I think I need this in my life haha. You know I love my coffee and overpriced starbucks americanos. My wallet doesn’t like it, but I figure I drink them black so its good enough. This smoothie sounds dang awesome though, as does the creamer! I’m the same with coffee…love the smell, taste, comfort, basically everything about it:)

    Girl, you know how I am about coffee–my motto is the more coffee, the better 🙂 I usually have about two cups a day but love indulging in a latte or cappuccino every now and then. I love the smoothie idea and I will have to keep your recipe in mind. Love the name of the post!

      Hi Rachel..it’s completely normal! All you have to do is give it a good shake before you drink it. Almond milk is good about 3-4 days in the fridge too. After that is starts to get a little funky.

      You are running the milk through a nut bag to get rid of the almond meal, right? You just mean the liquid separates?

        Thanks Laury! I did some more research today and found that most commercial brands use some sort of emulsifier so I picked up a pack of natural soy lecithin at the health food store yesterday and made a batch of almond milk – 2 cups soaked blanched almonds with 3.5 cups water, to which I added 3 tsp soy lecithin granules, 1 tbsp coconut oil and stevia to taste. Filtered through triple layered cheesecloth. The result worked a treat! After 3 hours in the fridge it is still uniform and has not separated, nor does it split in my coffee or hot drinks. I normally avoid soy but I think this tiny quantity is OK considering what it does. Here is the pic. Have a great day! x http://wp.me/aKoCM-lx

          What a great idea! I never thought to use lecithin for my homemade nut milk. Did you know you could buy sunflower lecithin? When you run out to of the soy look for that! I agree, a little bit, especially if you buy organic yourself is fine (unless you’re allergic). I guess that would make it last longer too? That would be nice! Glad to hear it’s worked out.     These recipes are awsome, but have a couple of questions. What can I use to replace the coconut oil, I have a severe allergy to coconut and can not use it. Also do you have the nutritional breakdown of each of your recipes?

      Hey Brenda, I would recommend for the creamer to just exclude the coconut oil and use a little sunflower lecithin as an emulsifier. Another reader actually suggested it for either way and I think it would work fine without!

      For the smoothie you can just leave it out. I like the added nutrition, but if you are allergic you are not missing much!

    Half a frozen banana
    25g Vanilla whey protein
    250ml Almond milk
    Handful of baby spinach
    1 Teaspoon natural peanut butter
    1 Tablespoon natural Greek yogurt
