Apricot Ginger Spread

Happy Tuesday! Happy February!

Two more months til Spring! Can. Not. Wait.

Today I am off to get my Prenatal Glucose Tolerance Test. I anticipate it being disgusting, given the fact that I have not had soda in a gazillion years. This stuff I have to drink  is supposed to be like 20x sweeter than soda. Bleh. I am super nervous about this test. I don’t know why. When I discussed it with my doctor, and asked him the risk factors, etc, I voiced how devastated I would be if my results came out positive. The fact that I exercise regularly, eat healthy, and have gained weight at a really good pace should be enough (in my mind) so if it were positive, I would feel like I was “unhealthy”. He actually said it has NOTHING to do with any of that. he actually seemed quite annoyed (in a way I get annoyed at my clients when they come up with ridiculous theories). Yes, obese women have a higher risk, but they may often times find out that they are type II and remain diabetic after their pregnancy. With gestational diabetes, my doctor said you just have to “blame the placenta.”

It is all about the hormones. The placenta supports the baby as it grows. Hormones from the placenta help the baby develop. But these hormones also block the action of the mother’s insulin in her body. This problem is called insulin resistance. Insulin resistance makes it hard for the mother’s body to use insulin. She may need up to three times as much insulin. When I think of insulin resistance, I think about people who do not exercise, or have eaten poorly, are overweight (type II diabetics). But it’s a whole other story with gestational diabetes. I still have some anxiety about this happening to me. I can see myself  feeling like I did something wrong, even though I know it’s not the case. I will be happy once the results come back. Wish me luck!

Here’s my latest creation based on craving and sampling everything in Whole Foods lately, haha. This is a GREAT addition to your Super Bowl Party Menu:

Creamy Apricot Ginger Spread


1 container Cream Cheese

1/2 Cup plus 2 TBS Organic Apricot Preserves

2 cubes Crystallized Ginger


Place all ingredients in a food processor, or in your Vitamix (variable I level 5) and blend to combine.

garnish with a sprinkle of cinnamon

Store in the fridge.

You can use this to spread on your favorite toast, dip some fruit in it, or my favorite Stacey’s Cinnamon Pita Chips.

This was a funny recipe for me to create, because I am not much of a “dip” person (aside from hummus). Especially “fruity” dips. But I love apricots.  So, I thought this would be delish! And it kinda was 🙂

I rarely buy these. Because I can not control myself with them half the time, lol. Other times they go stale before I eat them. I never buy any chips actually. If I do, it’s Staceys or Trader Joe’s Pita Chips. I also buy Newmans Whole Wheat Organic mini pretzels for Michael. Other than that, we don’t really do chips or processed snacks in this house. Michael complains sometimes…but it forces him to eat celery sticks and fruit when he’s “snacky”. So that’s a good thing in my book!

What kinds of snack foods (aside from fruit and veggies) do you eat?

I am bad at buying or thinking up “snack food.” It’s usually hummus and veggies or the pita chips. Fruit and veggies. Yogurt and Ezekial 4:9 Cereal or berries to name a few.

This is why I am at the super market almost daily. Our snacks are usually things that go bad quick. I would love to hear all of  your healthy snack food ideas!

    oh gosh, when it comes to test results, the waiting is always the worst part. i feel for you dear, i’m sure it’ll all turn out fine. 🙂

    as for snacks….yeah i’m the wrong person to ask. i don’t really snack but carrots with salsa and/or hummus is always a winning combination.

    Good luck with the glucose tolerance test today, it will go great. I’m sure you’ll have nothing to worry about and if something does come up, it will be okay too. My friend who is in super shape and eats well got gestational diabetes and was fine afterwards. Best of luck with it.

      Thanks. Yes, I always thought it was more overweight/ unhealthy women that got it. But nope. I knew a girl as thin as a minute that got it, and I started getting freaked out!

    Hate waiting for test results…or when they say “we’ll call you if somethings wrong, but if everythings good you wont hear from us” -whhhat? NO I want to know either way!
    I’m a big snacker-you name it, chips n salsa, hummus and veggies, etc.

    I love Hummus and veggies, Fruit of course. Also nut mixes.. though it is hard to stop. I don’t eat chips much either, but Chips and salsa are yummy.

Also I absolutely love those stacy’s chips! How many calories per serving is vegan creamcheese? is there a lot of fat?

      Hmm…according to the ingredients I used if I had to guess-timate there’s about 60 calories in a TBS. I am the opposite of a fat-phobe (no reason to fear it), but there’s like 2.5 grams of fat per TBS as well 🙂
      I break the cream cheese down in the vitamix, so I am not sure if that makes it even less calories per serving (since it becomes a lot thinner). But according to the cream cheese and the apricot spread added together, that is what I got.

      Not too bad at all for a treat!!!

    good luck with your test! i would loathe drinking sugar water too bleck! my fave snacks are raw almonds, larabars, raw carrots with mustart, pickles or pumpkin with a drizzle of molasses and some oats tossed in for texture

    Snacks? I am definitely a snacky person: carrots/PB or hummus, whole wheat crackers (sometimes if I buy them) + almonds, dried fruit, pretzels (IF I forget a snack at work and need the use the vending machine bc I feel faint haha), fruit…the basics.

    I keep kettle chips in the house for brandon. He eats them about 2 times a week in his lunch or on the weekend. It’s a compromise but it’s something he won’t budge on…even though he will pick fruit over chips now! I’m okay with it…

    Both my mom and sister had gestational diabetes, so I am predicting I will as well. They also got high bloog pressure from babies, so taking care of myself before AND during pregnancy is really important to me! Good luck!

      Thanks! Yea, my blood pressure has been like 106/75 so that has been great. I am hoping the diabetes is that good too! The gestational diabetes has nothing to do with how well you take care of yourself, according to my doctor. It’s a whole other ballgame. Something out of your control, which makes this control freak very uneasy!

    Good luck on your test! I had to have a fructose malabsorption test done which involved me drinking a beverage that contained 50g of fructose and tasted like concentrated Kool-aid (yuck!). No matter what the results are do not think that all this effort you put into staying healthy as possible is all in vain! It will only help your body bounce back so much faster after the pregnancy. Trust your body, it knows what it’s doing! I can’t just snack on hummus (to me, hummus is a food group), so it is usually apart of my meals. I snack on rice cakes with nut butter, protein shakes, a handful of granola or very dark chocolate.

    That looks so good! I LOVE Stacys Pita chips! I also have a very very hard time controlling myself with them. haha I usually eat hummus and veggies, fruit and raw nuts, apple with natural PB for snack foods. I am pretty boring. 🙂 Ok, I have to try this!!

    I always was super nervous about any tests during my pregnancies including the glucose test…but it definitely wasn’t as bad as I thought it would be! Good luck, I hope everything turns out okay for you!!

    We don’t usually buy chips either. Sometimes the hubby will buy tortilla chips because he loves to eat them with salsa and of course if he is eating them I will have a couple bites too. My weakness is some sort of ice cream. Usually its the lower fat version that we eat!

    I’m just like you in that my snacks are just hummus with TJ’s pita chips and veggies….the husband too sometimes gets annoyed that all we have are healthy snacks but it’s good for him! Once in awhile I’ll buy processed snacks to satisfy his tummy but it’s only on occasion! Other snacks we like are salsa with veggies and some tortilla chips and I make a sweet dip with greek yogurt and jello powder pudding mix – dipped with strawberries and apples – it’s delicious! 🙂

    Good luck with your glucose test. I have heard that those drinks they give you beforehand are awful. I haven’t drank any sodas or anything like that in years. A couple of weeks ago, I took a small sip of my husband’s soda and I couldn’t stand it. It was awful! Tasted sickeningly sweet now.

    Ha, I wish I had your number so I could text you while you sit and wait. You drink it and then siiiiiiiiiiiiiit. And you can’t drink. That is the bad part. I mean, I could get it down but I wanted something to get rid of that nasty aftertaste! No mint???? WHAT? You go to the store EVERY DAY???? Crazy. We go once a week Just store carrots and celery in water to keep them crisp and lalala. Now way, we would definitely go over our budget if I went daily. I might have to try making that dip for a party we are going to!
